A Traditional Irish Coffee

1.Warm a coffee mug with boiling water, discard water before building the drink (while warming)

2. Beat cultured or heavy cream* to stiffen in a cold metal shaker or bowl and set aside

3. In a warmed mug add a jigger of Irish Whiskey

4. Now add a heaping bar spoon of brown or demerara sugar (1 to 2 teaspoons to taste)

5. Pour strong freshly percolated hot coffee to within 1" to 1-1/2" of the rim (around 6oz.)

6. Using the back of a bar spoon "float" the stiffened cream on top,
the goal is to sip the drink through the cream
Optional: For a Bit O' Green drizzle with Creme de Menthe on top of the cream

* Check your local farmer's market for a cultured cream.
Supermarket whipping cream is ultrapasterized and will not float, default to a heavy cream.
Chill the cream for at least 36 hours and beat to stiffen with a fork or wire whisk in
a chilled metal container
